Chocolate Eclair Delight

Full disclosure:  If you are watching your weight, even just a teensy-eensy bit...go ahead and move on to the next blog you follow.  Check your email in-box, go read a book, return a phone call, or better yet, jump on the treadmill.  You really don't want to read this recipe.  It will make you want to make the recipe, which, in turn, will inevitably cause you to eat this recipe and then you'll regret it.  Then you'll be upset with me for sharing the recipe on my blog and I don't want you mad at me.  Especially not over something like this!  There's a whole host of other things I can think of doing to tick someone off besides sharing a recipe and delectable photos of said recipe.

You're still with me?  Okay, but don't say I didn't warn you!  I cannot be blamed for what might happen next.

I'm really not sure which is the bigger crime here:
  1. The calories that lie within this dessert...
  2. How easy it is to throw together...
I'll let you be the judge.


Chocolate Eclair Dessert
Here's What You Need:
1 small box, French Vanilla instant pudding
1 cup milk
1/2 box graham crackers
8 oz. Cool Whip
1 container chocolate frosting


Here's What You Do:
Whisk the pudding and milk in a large bowl. 
Fold in the Cool Whip.


Place a layer of graham crackers in the bottom of an 8"x8" glass dish.  Be sure the bottom is completely covered with graham crackers.
Spread half of the pudding mixture across the top of the graham crackers.


Then add another layer of graham crackers, followed by a layer of the remaining pudding mixture.
One last layer of graham crackers and you know what's coming next.


I popped the frosting in the microwave for just a few seconds to get it to a more smooth and spreadable consistency.  Remarkably, I didn't use the entire container of frosting.  Even I know when to say when.


The final step is perhaps the hardest one. 

Layer upon layer of creamy, rich, heavenly goodness.
Pop this in the fridge for at least 4 hours.  Something wonderful happens to the graham crackers while this sits waiting for you.  I won't ruin the surprise.  You'll have to find out for yourself...
