Easy Baked Manicotti

It seems like all of my mom friends have been lamenting the same old dinner woes lately.

They are tired of making the same things for dinner over and over.  Or they are looking for something new that's quick and easy.  I think this recipe definitely fits that bill. 

In one hour, start to finish, you can have a dish of cheesy, hot manicotti on the table.  Just add some bread and a salad and you are done.  And while the manicotti finishes in the oven, you can help your kids with their homework or go for a quick walk together around the neighborhood to enjoy the beautiful fall weather!

Easy Baked Manicotti
Here's What You Need:
2 cups spaghetti sauce
1 egg, lightly beaten
1 3/4 cups ricotta cheese
1 1/2 shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/4 cup basil pesto sauce (optional)
12 manicotti shells, cooked and rinsed in cold water.

Here's What You Do:
Heat the oven to 350 degrees.  Spread 3/4 cup of the spaghetti sauce on the bottom of a 9x13-inch baking pan. 


Mix the egg, ricotta cheese, Parmesan cheese and mozzarella cheese with the pesto sauce until well blended. 


Spoon the cheese mixture into a large resealable plastic bag.  Using scissors, cut off a small hole from one of the bottom corners of the bag.


Fill the manicotti shells by squeezing the cheese filling into each end. 


Pour the remaining spaghetti sauce on top of the filled manicotti shells.  Cover the pan with foil and bake for 40 minutes or until heated through.  With six servings, you are sure to satisfies your family's appetites!
