Holiday Goat Cheese Appetizer

Now is the time of year for holiday parties and gatherings.  Whether you have an office potluck or family get-together or neighborhood tree-trimming party, there's always a reason or need to put together food to share.

I don't remember where I ever saw this idea, I just know I didn't come up with it on my own. 

I come up with some great ideas every once in a while.

This is not one of them.


Holiday Goat Cheese Appetizer
Here's What You Need:
one small log of goat cheese
1/2 - 3/4 cup finely chopped shelled pistachio nuts
1/2 - 3/4 cup chopped dried cranberries
Crackers, such as Triscuits or another simple flavored cracker

Here's What You Do:
Toss the nuts and cranberries in a pie pan .  Unwrap the goat cheese and roll the log in the nuts and cranberries.  Use a bit of pressure to ensure the nuts and cranberries adhere to the cheese and don't fall off.  Either wrap the cheese log in plastic wrap and store in the refrigerator until you're ready to use it or display it on a pretty serving platter with an assortment of crackers.

This is a great appetizer to throw together last minute.  I love how the green from the pistachios and the red from the cranberries make such a pretty and Christmasy presentation.
