From Martha's Everyday Food (love that magazine!), I offer you Matzo Toffee. This makes for a great food gift to give someone this holiday season. Splurge on a pretty glass container to put the Matzo Toffee in so the person receiving the gift can see what a treat they are about to receive!
Matzo Toffee
Here's What You Need:
2 cups coarsely crumbled matzos
1 1/2 cups sliced almonds
1/2 cup (1 stick) unsalted butter
1/2 cup packed light-brown sugar
1/2 teaspoon salt
2 cups semisweet chocolate chips
Here's What You Do:
Preheat oven to 325 degrees. Line a large rimmed baking sheet with parchment paper. In a bowl, toss matzo pieces with almonds.
Place the butter, sugar, salt, and 2 tablespoons water in a saucepan and bring to a boil over medium heat. Stir constantly. Working quickly, drizzle matzo mixture with syrup, and toss.
With a spatula, spread the mixture the baking sheet. Bake for about 30 minutes. Remove from oven; sprinkle with chocolate chips. Let chocolate melt 5 minutes then spread the chocolate over the toffee. Pop it in the fridge until the chocolate has set. With your hands, break it into pieces and serve.
