I recently stumbled across a new blog in one of my magazines. I can't even remember which one now. The article was about decorating your home, what style your home is and then it recommended some good blogs to visit for ideas based on the various styles of home decor. Of all the blogs I visited, this one was my favorite. The author's name is Sandi. She has some beautiful photography on her blog. She designs fabrics, from what I understand, and works out of her home. When I first visited Portabellopixie, the most recent post was about her quest to develop the perfect pancake. Upon finding success, she posted her personal recipe for Buttermilk Pancakes and I liked what I read so I saved it. It just so happened, I had already planned to fix breakfast-for-dinner one night this week anyway, so it all worked out. Let me just say this.
These. Pancakes. Are. Heaven.
And when you throw in the wild blueberries from Trader Joe's frozen food section, you are in for a mind-blowing experience. My family ate and ate until we could eat no longer. And then, Evan called dibs on the last two pancakes so he could pack them in his school lunch tomorrow and make his classmates jealous. He did that one other time and I heard all about how everyone wanted him lunch at school that day.
Let me say one more thing about these pancakes. Only make these for people that you truly love. They are a little extra work what with separating the eggs and beating the whites and folding them in and all that. Well worth the extra effort but not something I'd be willing to go through on a school morning when we have about 20 minutes to fix and eat breakfast. Keep in mind, mine is a family that is reluctantly satisfied with Bisquick or Hungry Jack mix for our pancakes. I may have started something here and I'm not sure if they'll ever eat the "quick and dirty" method pancakes ever again. Heck! I don't know that I would ever want to eat those pancakes again!
